Quinoa and Tuna Salad
Quinoa and Tuna Salad
I'm having this for lunch today and it's super yummy! It's just something I made up, so bear with me on the recipe.
Cold, cooked quinoa (1/3cup dry, plus 2/3cup water for cooking)
1 can tuna, drained
Finely chopped veggies of your choice. I used:
- Carrots
- Green onion
- Red pepper
- Tomato
- Sugar snap peas
- Green olives
Juice of 1/2 lemon
1 Tbsp of olive oil
1 Tbsp balsamic vinegar
Salt & pepper
Toss it all together and refrigerate.
I'd consider this to be a portion and a half since it's probably about 500 calories (but I'm very hungry today ).

I "googled" Quinoa, and now know what it is, but how do you cook it? I assume you are boiling, but for how long, and what should it look like when it is done?
I like the idea that it's a good source of protein as I seem to be having a hard time getting enough of it in my daily calorie intake....

Cook it like rice: 2 parts water to 1 part quinoa. It only takes about 10-15 minutes, though (faster than rice). It looks like small seeds before cooking. After cooking the seeds "pop" to reveal their insides a bit.

Bulk Barn. You can also get it at health food stores or the organic section of Loblaws, but it's REALLY expensive! $8.99 for a bag (maybe contains about 3-4 cups of dry grains).

Most major grocery stores have it. I buy the "Red Mill" Brand i think? It may be in the health food type section.

This sounds yummy!! thanks for sharing. Nobody at home seems to enjoy Quinoa the way I do though.. oh well, more for me!

I have some quinoa in my pantry and was wondering what to do with it. Will give this a try tomorrow.
