Quinoa and Tuna Salad

Postby La » Tue Jan 06, 2009 11:55 am

I'm having this for lunch today and it's super yummy! It's just something I made up, so bear with me on the recipe.

Cold, cooked quinoa (1/3cup dry, plus 2/3cup water for cooking)
1 can tuna, drained
Finely chopped veggies of your choice. I used:
- Carrots
- Green onion
- Red pepper
- Tomato
- Sugar snap peas
- Green olives
Juice of 1/2 lemon
1 Tbsp of olive oil
1 Tbsp balsamic vinegar
Salt & pepper

Toss it all together and refrigerate.

I'd consider this to be a portion and a half since it's probably about 500 calories (but I'm very hungry today  ).

I "googled" Quinoa, and now know what it is, but how do you cook it? I assume you are boiling, but for how long, and what should it look like when it is done?

I like the idea that it's a good source of protein as I seem to be having a hard time getting enough of it in my daily calorie intake....

Cheers

Cook it like rice: 2 parts water to 1 part quinoa. It only takes about 10-15 minutes, though (faster than rice). It looks like small seeds before cooking. After cooking the seeds "pop" to reveal their insides a bit.

Bulk Barn. You can also get it at health food stores or the organic section of Loblaws, but it's REALLY expensive! $8.99 for a bag (maybe contains about 3-4 cups of dry grains).

I get organic quinoa at the Bulk Barn!

It's an extremely versatile grain and if you search it on RM you'll find a few conversations about it.

Most major grocery stores have it. I buy the "Red Mill" Brand i think? It may be in the health food type section.

Looks yummy La, i will try it out!

La,

I've got a box of "Quinoa flakes" but there are no cooking instructions on the box. They look like dry oatmeal flakes in the box.

Are you familiar with these and do you know how I should cook them?

Thanks

This sounds yummy. I like quinoa but haven't been very inventive - I usually just have it with yogart.
Thanks La :!: (and hope you're enjoying Disney :D )
