I'm looking for healthy (low fat/low cal) recipes for a spinach soup and a broccoli soup to add to my collection. For that matter any vegetable soup would be great. I alreay have a Curried Zucchini Soup recipe and of course Jacc's Squash soup recipe (love, love, love).

Anyone have any? I tend to lean toward the simple/quick recipes.

I honestly haven't looked into the calorie aspect of this one - but, we make a yummy cheesy broccoli soup quite often.

1 - 3 cans of cheese soup - make as per directions on the can (hmm....maybe you won't like that....)
add cooked broccoli
blend with a hand mixer.
i run for me.

WINTER SOUP WITH BABY SPINACH AND PARMIGIANO CHEESE



1 tablespoon of olive oil
2 cups of chopped onion
1 cup of chopped celery
4 garlic cloves, minced
4 cups of canned vegetable broth
2 14 ounce cans of mixed beans
2 cans of diced tomatoes
3 cups of diced potatoes
2 cups of sliced baby carrots
1 cup of turnips
1 cup of mushrooms
1 teaspoon of dried oregano
1 teaspoon of crushed red peppers
2 cups of baby spinach
small wedge of finely grated parmigiano
reggiano cheese


Heat oil in large pot over medium heat,
add in onions and celery. saute until onions
are light brown, about 7 minutes. add
garlic, and stir for 1 minute. add broth and
other vegetables but hold the mushrooms
and spinach. bring to a boil. reduce heat,
cover and simmer until turnip is tender,
about 15 minutes. add mushrooms and
spinach and simmer for 5 minutes.
ladle into bowls, sprinkle with cheese and
serve with multigrain bread sliced thick.
optional protein boost: add shrimp or
diced chicken breast.

A good low-cal/low-fat option for making "creamy" soups is to use evaporated milk (either regular, 2% or fat-free) in place of cream. You have to be careful not to "boil" the soup after the evaporated milk has been added or it wil separate. I personally like the 2% version the best.

I don't know about anyone elses but my red pepper soup is souper easy :D

8cups vegetable broth - I use McCormicks vegetable bouillion cubes they come in beef, chicken and veggie flavors but all are vegetarian
4-6 jars roasted red peppers. Chopped, sliced, whole doesn't matter.

Cook to boiling and then use the hand blender to "cream".

That's it that's all.

I do add a bunch of pepper and hot sauce but it's not necessary.
I've also heard of using cream or rice to thicken it up a bit but I haven't done that.

I usually use plain non fat yogurt in place of cream in soups. Works ok for me.

Thanks for the recipes so far, they look good.

I've made broccoli soup with chicken stock, bay leaf, onion and once it has simmered a bit just puree it in the blender - creamy and very low fat (just a bit of oil to cook the onion)

I love this one on epicurious: Curried Peanut and Tomato Soup. I use half the peanut butter and it still taste wonderful

Lonerunner, I don't have any recipes to contribute yet, but the curried zucchini soup sounds awesome - could you post that recipe?

Curried Zucchini Soup

1 Onion Chopped
1 Medium Potato Chopped
3 Zucchinis Chopped
1-2 tbs of Indian Curry Paste
900ml of Chicken Stock
Mint (optional)
Yogurt (optional)

Put all veggies in pot with curry paste and stock
Bring to a boil and then simmer until veggies are tender
Toss in mint leaves at very end for a couple minutes
Puree
Reheat

Add a tbsp of yogurt to bowl if you like
Season with salt and pepper if you like

There are 7 soup recipes (and one "1 point" Chili recipe that mentions the word "soup") in the Recipes (Meals and Dressings) thread at the top of the food section.

Worth a look.
