I love pumpkin, and bought a few cans of pumpkin purée on the weekend since it was on sale. In other years, I've purchased a pumpkin and cut it up, cooked it, and then frozen it in small servings. I might do that this year as well.

I made a Pumpkin Oatmeal Bake (breakfast dish) on Saturday, and will probably make Pumpkin Apple Loaf sometime soon. I've used pumpkin in soup before, but I don't have a favourite recipe for that.

What are some of your favourite pumpkin recipes - other than Pumpkin Pie? Pumpkin Pie is a given! :drool:

Can you post your pumkin breakfast recipe? Sounds interesting!!

I baked our pumpkin yesterday and made this soup: Southwestern Pumpkin soup

I used milk instead of cream and less sugar. It's very different but excellent.

An unhealthy (but delicious and easy) pumpkin treat: chocolate pumpkin cupcakes.

Buy a chocolate cake mix. Don't put any ingredients in it EXCEPT a can of pumpkin puree.

Mix, pour into cupcake tins - voila!

Icing with whatever you'd like.

A quick and delicious treat when you are in a hurry to a party, potluck, etc.

I have a from-scratch recipe for chocolate pumpkin cake. It is Oh-so delicious and Oh-so bad for you! Everyone who tastes it wants the recipe--it is so moist. However, the recipe is a lot of work and rather time consuming. The approach of just adding pumpkin to a cake mix is worth a try.

Interesting! This is somewhat like the cupcakes I make where I just add eggs, melted butter, instant pudding mix, and sour cream to cake mix.

I'm going to try an experiment and make Pumpkin Tiramisu (instead of pumpkin pie) for Thanksgiving. I think I'll just add pumpkin puree and spices to the egg/mascarpone cream and then make it as usual.

Baked Pumpkin Pie Oatmeal

I only put in 1/3 of a cup of sugar so that I can add sugar when I eat it, if I want to. Today, I had it with some brown sugar on top. Tomorrow, I might put a bit of maple syrup on it, and/or some mixed berries. A follow up note on Facebook by the blogger said to cook it for an hour if you put yoghurt in it along with the milk.

Pumpkin Apple Loaf/Bread
Makes 2 9x5 loaves, active time 30 min, start to finish 3 hours (includes cooling)

For Topping:
1 tbsp all-purpose flour
5 tbsp sugar
1 tsp ground cinnamon
1 tbsp unsalted butter, softened

For Bread
3 cups all-purpose flour
3/4 tsp salt
2 tsp baking soda
1.5 tsp ground cinnamon
1 tsp freshly grated nutmeg
1/4 tsp ground cloves
1/4 tsp ground allspice
1 15-ounce can solid-pack pumpkin
3/4 cup vegetable oil
2.25 cups sugar
4 large eggs, lightly beaten
2 Granny Smith apples, peeled, cored, and chopped (2 cups)

Topping: Blend together the flour, sugar, cinnamon, and butter in a small bowl with your fingertips until the mixture resembles coarse meal.

Bread: Put a rack in middle of oven and preheat to 350 F. Butter two 9x5 in loaf pans.

Sift together the flour, salt, baking soda, cinnamon, nutmeg, cloves, and allspice into a medium bowl. Whisk together pumpkin, oil, sugar, and eggs in a large bowl. Add flour mixture, stirring until well-combined. Fold in apples.

Divide the batter between buttered loaf pans. Sprinkle half of topping evenly over each loaf. Bake until wooden pick or skewer inserted into the center of bread comes out clean, 50 to 60 minutes.

Cool loaves in pans on a rack for 45 minutes, then turn out onto rack and cool completely, about 1 hour. Keeps up to 1 week in foil and fridge, can be frozen up to 1 month.

Too bad that don't like cake/cupcakes very much, because that sounds super easy! I'll need to remember that recipe if I need to cook for other people though.

Bet you could use a spice cake mix too :drool:


I tried it with the spice cake mix last year around Thanksgiving, when I had canned pumpkin in the house. It was ok, but not the same as the pumpkin muffins from Tim's, which I love. BTW, I haven't seen them yet this year.

I like to throw a can of pumpkin into my butternut squash soup, along with an apple. Then I add... oh... a bunch of stuff... cumin, curry, a bit of cayenne, cinnamon, salt and pepper... till it's delicious. 8)

My husand made the pumpkin cheesecake tonight from the website Size 5 posted earlier.

I cannot believe we have to wait 48h to taste it!!! IT LOOKS SO GOOD!! :D

Made this over the weekend. Yum! Even with a gluten-free cake and dairy/sugar-free icing.

pumpkin cheesecake is SOOOO good. I haven't made the one on that website but I've had others and it was fantastic!

I think it's just regular canned pumpkin, as opposed to the pumpkin pie mix.

I just put another pan of the pumpkin oatmeal bake in the oven. I haven't tried any other recipes yet, but I really want to try the Southwest Pumpkin Soup that Sonia posted.

pumpkin cheesecake is SOOOO good. I haven't made the one on that website but I've had others and it was fantastic!
