Breakfast: A Juggle of Fullness and Healthitude

I've been trying to eat healthy, quick breakfasts that will keep me from reaching for a muffin until about 10 a.m. However, I've gotten a bit tired of the repetitive Cheerios or two pieces of toast.

I tried looking up 'clean' breakfasts and came up with what looked to be a delicious pumpkin oatmeal bake, but in reality find it to be tasteless and gummy (I don't /think/ it was me). The other suggestion was a hollandaise sauce-less eggs florentine which is a slight improvement.

What is your go-to for a effective, but quick, breakfast?

I'm very lazy, and don't have a lot of time in the morning :) . I make muffins at home on the weekend and freeze them. Then, I can pull one or two out the night before to defrost on the counter & they're ready in the morning. I try and have a few different kinds in the freezer so I get some variety during the week.

They are. I usually make a batch of 18 - 24 muffin cups full, 2-3 min in the microwave and voila. Quick, ridiculously nutritious and filling. If I'm particularly hungry I'll have two.

I put them on top of a paper towel on the plate to soak up the moisture when I heat them up, otherwise I find them soggy.

A batch lasts me about 3 weeks. I try not to have them on weekends.

A filling breakfast for me is oatmeal topped with plain Greek yogurt and fruit, and a bit of maple syrup or brown sugar. The yogurt ups the protein and helps make it a stick-to-your-ribs kind of breakfast. (Well, coffee, too, it goes without saying.)

I keep reading the title as Breakfast with the Juggalos.

Which sounds way more entertaining than the Red River Cereal I usually eat.

I'm assuming we don't have the book for page 185.

I've found a whole host of recipes after Googling 'Paleo Egg Muffins' or the like. I can't wait to try these out!

me too - oatmeal with almonds, brown sugar and a bit of cream. Sometimes fruit as well. And a glass of milk.

I'd be starving in half an hour on a bowl of cheerios or toast. :shock:

I like to do steel-cut oats in the microwave, cook them with some chopped apple and dried cranberries mixed in, then top with a teeny bit of maple syrup, some cinnamon, and milk. They do take 17 minutes in the microwave, admittedly, but you can make a few days' worth at once, and I find that as long as I start them going first thing, by the time I've packed my lunch for work, made breakfast for my son, made my tea, etc, the oatmeal is ready too.

Greek yogurt with plenty of fresh fruit and a little granola also works.

I give this suggestion to almost ALL of my clients. Those with kids find that the kids love them as well.

The basics: 6 eggs and about 1/4 cup of egg whites.

Additions: Browned meat (turkey sausage, beef, bacon - your liking)
Veggies - try to keep to "dryer" veggies. I find mushrooms too soggy.
A bit of grated cheese

I do mine in a muffin tin and toss into the oven @ 350 for 15 minutes or so.

The really nice thing is if you are making for several people, you can customize the veggies.. so person A doesn't like peppers.. they don't get peppers in theirs, and so on.

I tend to do a cup or so of berries, a half cup of large flake oats (uncooked) or 1/4 cup oats and 1/4 cup granola, with plain yogurt on top. I have this at about 7:00 and it holds me till 11:30 or 12. Alternatively, I find a bagel with peanut butter tends to fill me up too. Oh and yes, coffee is essential!!

MMMM I made Ironboy's egg muffins on the weekend - they were fantastic but my muffin pan ended up in the g-can. Although I oiled it, the eggs got stuck real bad. Any recommendations on a good muffin pan? I thought I'd try one of the silicone brands

I have the cookie sheets from this line by Williams Sonoma, which includes muffin pans, and while they're pricey (this is the US link, they're a bit more in Canada I'm sure), they are worth EVERY PENNY. Seriously I never have to use a spatula to get my cookies off the sheets, and they always turn out perfectly. If I made muffins/cupcakes more, I wouldn't hesitate to fork out the extra for these. I'm OK with paying more if they're that much better.

I'm all about the oatmeal. But I rarely get bored with it! I typically add raisins, brown sugar, cinnamon, and milk. If I have some handy, I'll also add cranberries or crushed walnuts (the walnuts up the protein factor!).

On work days, I start with a bagel and coffee (morning walk to Tims! lol) and then add yogurt and fruit as the morning progresses.

I made these last night: http://www.sugarfreemom.com/recipes/per ... -friendly/ except I used brown sugar instead of sugar substitute and replaced the apple sauce/banana with pumpkin, since that is what I had. And no flaxseed. Basically, a totally different dish, just followed the idea and the proportions.

They turned out really well! I ate two out of the fridge this morning, so I'm not sure how they turn out when defrosted from frozen, but I love the portability!
