Anyone know of any good resourses for veggie meals?

My wife and I have decided that we eat way too much meat so we will start adding vegetarian meals into our weekly plan hopefully getting up to 3 full veggie evening meals per week.

I know quite a few of you here are vegetarians.

Do you have any sites/resources for vegetarian meals?

I like Budget Bytes in general for recipe ideas. If you go to her blog, you'll see on the right hand side there is a section called "Labels" and under there, one says "vegetarian".

The Moosewood Cookbook series are good.

And really, really filling. I made it and froze part of it. The total recipe made Dinner for A and I one night, dinner for T, A and I another, and then another evening T and I finished the batch off. Seriously awesome :D

I started old school with some really good books. Molly Katzen's original "Moosewood" cookbook is great, as are some of the others from that restaurant. A lot of their recipes are online now.

Now when I look up recipes I usually have an idea of what I want to make, put in the ingredients in google, and see what recipes pop up. :)

Here are a few of my favorites to get started:

I've cooked up some lentils and then thrown them into a pan like ground beef and cooked them with taco seasoning, hot sauce, onions, peppers, etc. and then used the "meat" in corn tortillas, topped with all of the normal taco toppings like tomatoes, lettuce, sour cream, cheese, cilantro... So delicious! If you want to go vegan for the meal, I find they are just as yummy without the cheese and sour cream.

I cook lots of meals using beans and quinoa instead of meat. If you have a Costco membership, they sell big bags of organic quinoa for an amazing price, and also a sprouted bean mix by the same company. Chickpeas lend well to curry dishes, or to cold salads (chickpeas, whatever raw veggies you have in the fridge, whatever herbs you want to add, feta cheese, and lemon/lime juice and olive oil as a dressing). Soups are easy to make vegetarian - and with fall coming, you should be able to find lots of soups using various squashes. So delicious!

www.allrecipes.com is a good resource and has a vegetarian check box in their search. I also second the Budget Bites website. I love that site!

Oh... for quick meals - anything using eggs can be awesome. A veggie omelette makes an awesome dinner if you don't have the time or energy for an exciting meal.

Simple recipes we make often, and the boys willingly eat...

Finally tried these. So good. Made enough that the girl can take them for lunch.

I realize that this thread is a bit old, but if anyone wants some quick and easy ideas, here are my favourite go-to weeknight meals:

1) Curried chickpeas with green peas on rice -- I've attached the original Patak's recipe, but I skip the spices they suggest and just use their Mild Curry paste, then I throw a handful of frozen peas in just before I serve it.
