I baked a large pan of oatmeal for breakfasts this week with peaches and strawberries. Between the 3 of us it lasted 4 days. We can just scoop out a bowl and reheat in the morning and add a drizzle of maple syrup.
Here is the general recipe I follow. I swap out the fruit with whatever I have in the fridge and we use regular milk.

I think so. I make mine with skim milk or almond milk and nuke it for 90 seconds.
We took packets of this on our recent camping trip. We didn't have a microwave, but cooked it on top of our little camp burner--took only a couple of minutes. It was a tasty hot breakfast on a cold rainy morning.

Can steel cut oats be made in a rice cooker? That way, they could be cooked in the morning, but without needing attention. I've never tried it and it could end up being an epic fail...

Depends on how low the temperature can be set. You're looking at 8 hours of cooking time - that's a lot!
What you could try is putting the oats in a bowl, putting water in the rice cooker and then the bowl in the water. That's how some people cook oats in their slow cookers to avoid scorching.

You should try PC Blue Menu steel cut oats (not in the packet; in a cylinder-shape container). I make a batch most mornings & it takes just 20 minutes & little attention. I bring the water to a boil, add the oats, return to a boil & let simmer on low (uncovered), until cooked. I have a gas stove which may make it a bit easier - I find it much easier to control the temperature w/ gas. I go about my morning routine while they cook.

These are the ones I have- they are pretty easy to cook.

You can, but they have a tendency to boil over. In fact, when you google "steel cut oats in rice cooker", a suggested search is "steel cut oats in rice cooker boil over"! I tried it once and it made a huge mess - never again!

I do mine in the slow cooker/crockpot with relatively good success.
