I like Soup!!!!

I finally made Jacc's famous ButterNut Squash soup!!!!

mmmmmmMMMMMMMmmmmmmmmm

Yummmmmmmyyyyyyy!!!!!!

It was an absolute hit around here, even our fussy 2 yr old loved it!!!!!

We need to start a Recipe section where we can all post our favorite foods. Jacc, anymore??????

Here I'll repost it cause it was buried in a general discussion forum thread:

Butternut Squash soup is easy! And delicious.

Cut one really big, or two medium sized squash (the beige ones with orange flesh, that's butternut right?)

Gut them, Put them in the oven at 350 for 40-50 minutes (or until a fork sinks in without resistance) I sometimes flip them over after 25 minutes.

Scoop out flesh (into a bowl) (which can keep until the following day if you don't have time to make the whole soup that evening)

In a deep pot, with a bit of olive oil, sautee some onions and a bit of garlic. Add squash and enough chicken broth to cover the squash and a bit more (usually 1200-1500ml).

Bring to a boil, simmer over medium heat for 15 minutes.

Blend with a hand mixer.

Add half a cup of half&half cream or coffee cream. stir and warm over medium heat for 5 mintues or so.

Salt and pepper to taste.

It's really nice with diced cheddar or monterey jack cheese in it.

hmm. it's a mental health day, maybe i need to check the recipes again before i go grocery shopping. could be an apple lentil soup day. i still have 2 servings of the squash soup in my freezer....

OK as a non-cooker, does someone want to explain something to me?

What does gut the squash mean? I would take it to mean to clean out the fleshy part, but later on after it is cooked the directions say to clean out the fleshy part. So what does gut it mean?

take out the seeds.

just made the apple lentil soup. it is good, but the squash one is my favorite so far.
