OK...
For the Pork Chops:
scramble an egg with about a Tbsp of milk. place in a wide dish (I use a pasta plate)
In another pasta plate, place about 3/4 c of seasoned bread crumbs (I use poultry seasoning, black pepper and salt)
Dip the pork chop in the egg mixture, and then in the bread crumbs, place into a frying pan in which you have melted 2 T. margarine, and 1 T olive oil. Place heat on medium-low and cover. Cook for 10 -15 min, until browned, flip, and cook for an aditional 10 minutes covered. Remove the lid and let them crisp up a bit.

Meanwhile, cook the beets. I use smaller beets, and I just wash them, but don't peel them. Cook until fork tender ~ 30 min. Rinse with cold water, then peel and slice them. Clean the pot and return the beets to the pot. In a separate small bowl, meausure about 1 - 2 T cornstarch, add 1 - 2 T vinegar and mix. Pour over beets to thicken and cook the starchy flavour out of the beets. (You may want to add a bit of water or orange juice to thin out the sauce a bit.

Pasta with Roasted Cauliflower and Ham

* 1 head cauliflower (about 2½ pounds), cored and cut into 1-inch pieces
* 3 tablespoons vegetable oil
* Salt and pepper
* 4 tablespoons butter
* 1/2 cup loosely packed fresh sage leaves, coarsely chopped
* 1 pound penne pasta
* 1/3 pound sliced boiled ham, cut into ribbons

Directions:

1.Preheat the oven to 400°. Spread the cauliflower on a baking sheet, drizzle with the oil and toss; season with salt and pepper. Bake until browned, about 20 minutes.
2.Meanwhile, in a small, heavy saucepan, melt the butter over medium-high heat. Cook, without stirring, until the butter is golden brown, about 6 minutes. Stir in the sage and remove from the heat.
3. In a large pot of boiling, salted water, cook the pasta until al dente. Reserve 1/2 cup of the cooking water, drain and return the pasta to the pot. Stir in the ham, cauliflower and reserved pasta cooking water. Stir in the sage butter and season with salt and pepper.

I used prosciutto instead of ham (and fried it so it was nice and crisp); used only about 1/4 cup of the cooking water as I don't want it to be runny and used dried sage instead of fresh - about 1/2 - 1 tbsp.

Dinner was ham and cheese "slider" with spinach salad.

Only I didn't make 24! Or use slider buns. I just used a regular bun that I cut in half. I caramelized the onions and added them to the sandwich before baking instead of adding them to the sauce and used prosciutto instead of ham (since that's what I had) and provolone cheese (since I don't like Swiss.)

Chicken tacos - lazy girls way.....

Buy roast chicken in grocery store. Strip from bones. Take package of taco seasoning, add to chicken placed in fry pan. Add water (slightly less than usual requirement for taco package - I used 3/4 c instead of 1C). Simmer briefly. Eat as usual taco!

I don't cook real meals very often :oops: but when I do, I'm definitely a meat and potatoes girl!

tonight: chicken (drumsticks... shake & bake... :oops: ) and potatoes/carrots/onions/garlic (baked in the oven with olive oil and seasoning salt... yum!). Of course the vegetables took forever to cook even though I started them first... so I ate in two courses. :lol:

I have enough left for a couple of days of lunches too...

Last night we had a yummy dinner:

leftover italian sausage, cut up into bite size pieces
Re-Heated in the frying pan with some onions and jalepenos
While they are re-heating, boil water and make penne pasta
meanwhile, over in the fry-pan, add one can of italian diced tomatoes (undrained) and fresh spinach (mmm). heat until spinach is wilted, add in the pasta, and some fresh ground pepper and some garlic&basil, stir and heat until pasta nicely coated.
Served.
With a nice big salad.

Soooo tasty!

Dessert: Peach Crisp with a scoop of maple walnut ice cream *yum*

Tonight: Bruchetta chicken (homemade bruchetta topping on grilled chicken marinated in sun dried tomato dressing).

Made pasta pomadoro for supper. Soup is chilling in the fridge. I'm going to add the meatballs tomorrow, before I freeze it. I need to buy some more containers too...I'm running out of jars, containers, freezer bags - everything!

If you take the time you can check off all the stuff you have in your kitchen (they call it your e-pantry) and then you can search for recipes based on what you have.
Tried one recipe tonight and it was really good.
