Is it a good idea to deflate the tires while the bikes are parked for the winter ?
I just thought it might 'de-stress' the sidewalls of the tires and the tubes.

Only if you hang it. Better to leave them inflated if the bike is still on its wheels. Better yet, store it on the trainer

The tires will gradually lose pressure over the winter any way so I don't think it's a problem to leave them inflated.
I store my bikes in my heated basement as I don't feel it is good to leave them in the freezing cold garage. I believe the cold might effect the tension of the spokes and cables. It's probably not necessary but I feel better about it.

Mine is either hanging or on the trainer, so tires are always inflated.
I would only deflate them (a little) if it was hanging. If it's standing and the tires are deflated I think you're running the risk of developing a flat spot on the tires where they are contacting the floor. Not exactly sure how long that would take, but I do see that as an inherent risk.
