late dinner tonight... pork roast with onions, mushrooms, and garlic are in the oven now... mashed potatoes and green beans are done a bit early so I'll probably eat some of those while waiting for the rest (my timing is always bad!! good thing I'm just feeding me! lol).

Trying a new recipe out from the Sobey's Inspired Magazine.
Rustic Chicken Mushroom Stew
1/4 cup all purpose flour
1 tsp of salt and pepper
3lb chicken drumsticks skin removed
3tbps olive oil
1 green pepper chopped
2 onions chopped
6 garlic cloves minced
3 tbps of italian herb paste (it has rosemary, oregano, thyme, basil)
4 cups mushrooms
2 tbsp balsamic vinegar
1 can stewed tomatos
1/4 cup tomato paste
1/2 cup chicken broth
1. Preheat over to 375. Season flour with salt and pepper and toss chicken in mixture. save leftover flour
2. heat oil in skillet over medium heat and brown chicken on all sides. Arrange in a single layer in a casserole dish
3. In skillet cook onions, green pepper, garlic and herbs for 5 min or until tender. Sprinkle leftover flour over vegetables. Add balsamic, tomatos, paste and broth and bring to a boil.
4. Pour mixture over chicken. Bake uncovered for 30 minutes.

Dinner was: salad of spinach, broccli, lentils and blue berries wit Ken's lite italian dressing, thin bun with soy butter.
Snack: apple
Supper: post free weights protein shot, toast, banana.

Tonight is rosemary pork tenderloin, sweet potatoes, marinated vegetable salad and a ww baguette. Dessert is Halloween Pilsbury cookies that we baked for an afternoon activity.

Tonight is salmon steaks... looking up a cauliflower recipe... I seem to recall seeing a baked cauliflower recipe somewhere... I'm not sure if I'm making brown rice or sweet potatoes yet. Depends on how I make the cauliflower.

Sweet potatoes? Interesting, I am not sure I can see how that would go (but I will try it one day).
Tonight was supposed to be a goat cheese/eggplant fusilli, but D forgot to get pine nuts for the recipe. Backup plan is a homemade pizza with goat cheese, various peppers, garlic and whatever else we decide to throw on there.

Sounds to me like the cupcake was grossly outnumbered.

Last night the M-I-L cooked for the first time in a loooooooooong time. She made her awesome. awesome beef stew. The gravy is To. Die. For.
Tonight will be BBQ pork tenderloin, with grilled zucchini, steamed broccoli, and some sort of BBQ potato (maybe with carrots and onion ), and a salad.

Sounds to me like the cupcake was grossly outnumbered.
And really, chocolate comes from cocoa beans, so it basically counts as a legume.
